O.K. - buckwheat is a fruit. No really, it is in the same family as rhubarb and sorrel. As well, contrary to it’s name, buckwheat has nothing to do with wheat and is actually gluten-free. However, just like oats you have to be sure it isn’t contaminated or blended with other flours for flavor.

Buckwheat has a variety of healthful properties. It’s an excellent plant source of easily digestive protein and contains all eight essential amino acids, so it’s close to being a "complete" protein. Buckwheat is also high in fiber, B vitamins and, according to a USDA study, keeps glucose levels in check better than other carbohydrates. It’s also said to lower blood pressure and reduce cholesterol.
I found this spiced muffin mix at my local supermarket but it can be found on line as well (http://www.trulyorganicbaking.com/shop/). The buckwheat flour created a light yet filling muffin with a unique nutty flavor. With the addition of chocolate chips, pecans and brown sugar this muffin is a satisfying, healthy breakfast or fulfilling afternoon snack, especially for those avoiding wheat.
Gluten-Free Chocolate Chip Muffins
1 package Truly Organic Spiced Muffin Mix
1 cup mini chocolate chips
1/4 cup brown sugar
1/4 cup chopped pecans
Prepare batter according to package directions. Fold in chocolate chips.
Pour batter into paper lined muffin tins. Evenly sprinkle with brown sugar and pecans.
Bake according to package directions.
Makes 12 muffins.
