If you don’t mind chopping (and unfortunately I kind of do), there is nothing like homemade pico de gallo, also known as salsa fresca. This fresh mix of tomatoes, onions, jalapeno and cilantro produces a harmony of flavors that compliment an array of dishes, or is simply delicious on it’s own.
The straightforward preparation is simple, so I'll spend my time highlighting the top ten ways I enjoy using this versatile Mexican condiment:
*Serve with tortilla chips and homemade or prepared guacamole
*Add to fish tacos or any other form of “street tacos” (steak, chicken, pulled pork)
*Mix in to your favorite frittata recipe
*Top a cheeseburger along with melted cheddar and avocado
*A tangy accompaniment to mac and cheese
*Tossed with grilled shrimp
*Add to the filling of any burrito including the breakfast variety
*Compliments quesadillas
*Sprinkled on top of any salad
*Served with cheesy cheddar scalloped potatoes
Pico de Gallo (fresh salsa)
¾ cup white or red onion finely chopped
2 cups plum tomatoes, seeded and finely chopped
1 jalapeno finely chopped with seeds removed
1/3 cup chopped cilantro
1 heaping tsp. coarse sea salt or to taste
Combine all of the ingredients above in a medium bowl.

ReplyDeleteMay I also suggest it as a great filling to Omelette's too. Add fresh mushroom, cheese, pico, ham, and spinach to make a healthy filling breakfast!
