Blueberry Mint Lemonade Granita



OK, I’ll tell you how this dessert came about.  It’s relatively convoluted but try and follow along.  This past Monday my dear friend Cindy from the dog park once again brought me a bag of limes from her tree.  They are a variety of lime that looks like a lemon and almost tastes like one.  Therefore, it’s a versatile citrus.  I had recently posted a link to a Strawberry Basil Champagne Cocktail on the blog What’s Gaby Cooking.  Cindy checked out the blog and suggested I make Gaby’s Strawberry Basil Lemonade with my haul.  I thought I had a pint of strawberries at home, but it turns out I only had blueberries.  When my daughter Eva came home from school she went to Gaby’s blog and found a recipe for blueberry mint lemonade.  We had those ingredients, but she was dying to make a granita, one of her specialties.  So the drink became Eva’s Blueberry Mint Lemonade Granita. 

I am sure this drink is fabulous because the granita is phenomenal.  It’s tart, yet sweet and refreshing with the addition of mint.  It’s like a healthy slurpee, but so much more.  These flavors really work well together and the natural violet/blue color is breathtaking.  Don’t wait until spring to make this beautiful frozen dessert.

  2. Love your wonderful weather shot!! I'm missing it today with our grey and misty morning.
    My dad has a tree like that with the limes and he is always bringing us bags and bags of them, I'm keeping this recipe handy!
