Cranberry and Salted Pistachio White Chocolate Bark and the Second Annual San Diego Food Bloggers Bake Sale

This will be the first year that Virtually Homemade participates in the Annual Food Blogger's Bake Sale. Our faithful leader Marie of Meandering Eats is organizing this event for San Diego, which benefits Share Our Strength. One in five children in the United States struggle with hunger and Share Our Strength creates initiatives to ensure that children have adequate access to nutrition in school and at home.

The baked items featured at this sale not only taste good, they are beautiful.  It is true, we eat with our eyes first.  Everything from homemade ingredients, to beautiful packaging and labels, take bake goods to a whole new food blogging level.

Great News! Discount Cookware and Cooking School in Pacific Beach, has been once again kind enough to host this spectacular event on Saturday, April 28, 2012 at 10AM. The goal is to raise $2,500 from San Diego. Please stop by - you won't regret it!

I’d like to share the recipe for the first confection I will be preparing for the sale – Salted Pistachio and Cranberry White Chocolate Bark.  The sweet of the chocolate, combined with the tang of the cranberries and nutty saltiness of the pistachios, simply dance in your mouth – enjoy!

4 3.5 ounce bars of white chocolate
1/2 cup dried cranberries
1/2 shelled, salted pistachios

In a glass bowl heat white chocolate in microwave for 1 minute.  Stir and re-heat in 30 second increments until chocolate is melted.  Stir in cranberries and nuts.  Line a baking sheet with parchment paper and spread chocolate to desired thickness.  Refrigerate until hard.  Break into pieces and store in a cool air tight container.
