Brown Butter Mashed Potatoes with Three Onions


I know that brown butter is the "it" ingredient and perhaps a bit over done.  However, I couldn’t help myself – mashed potatoes with brown butter and a trio of onions – heaven!



Since these spuds have more butter than I usually put in my regular recipe, I decided to lighten up on some other ingredients.  I’ve used low fat/low sodium chicken broth as part of the liquid and removed any extra high fat components such as sour cream, cream and mascarpone.



So why brown butter? Browning this magnificent ingredient adds a nutty flavor and aroma.  When you heat it past the melting point you start to brown the milk solids.  It's a simple yet delicious trick.





Three Onion Brown Butter Mashed Potatoes
*For thicker potatoes decrease chicken broth by 1/4 cup
Serves 4 - 6

Ingredients
  • 5 lbs. Russet potatoes, peeled and cut in half
  • 1 cup whole or low fat milk
  • 3/4 cup low fat/ low sodium chicken broth
  • 1 stick (1/2 cup) salted butter
  • 1 bunch green onions, chopped (reserve 2 tablespoons for garnish)
  • 2 tablespoons fresh chives, chopped
  • 1 large shallot, chopped
  • 1/4 teaspoon kosher salt
  • black pepper to taste
Cooking Directions
  1. Place potatoes in large stock pot and cover with salted cold water. Bring to a boil.
  2. While potatoes are cooking place butter in a medium saucepan on medium high heat. As butter melts, stir constantly. Scrape brown bits off bottom of pan. When golden, add three onions, salt and pepper to pan and cook for 1 more minute. Take off burner and put aside.
  3. Drain potatoes when they are tender to a fork. Place potatoes back in pot and turn heat onto low. Stir potatoes for about three minutes, removing any excess water. Add milk and chicken broth - beat with an electric mixer or potato masher until smooth.
  4. Fold in butter mixture until well combined. Serve hot with green onion garnish.
