Homemade Trail Mix Granola Bars (Wedges) - Gluten Free


Breakfast can be a bit challenging in our household – that’s where these 5 ingredient Trail Mix Granola Wedges come in.  I simply can’t take the disappointing look my daughter has when cereal or toast are the only options for breakfast.  She has a food blogger Mom and she has high expectations and has been a little spoiled by all my cooking and recipe testing.  I can't blame her.





Forget commercial granola bars!  These are so simple to make.  It literally took me minutes.  I also thought it would be fun to start a series of 5 ingredient recipes.  When I started my blog I swore that all my recipes would be easy to create and if they were a bit more difficult I’d find a way to make them simpler for my readers. So expect more 5 ingredient recipes soon!



Back to the granola bars.  There is so much good stuff in these – whole grain oats, nuts, dried fruit and raw honey.  As well, I used gluten free oats so this breakfast is gluten free for sensitive tummies.  I like using raw honey because it’s a sugar in one of its most natural forms and totally unprocessed.  So you get a little sweet, a little crunch, a little health and hopefully not a disappointed look.




Homemade Trail Mix Granola Bars (Wedges) - Gluten Free

Recipe by Liz Hughes
Prep time: 15 minutes
Yield: 8 granola wedges

Ingredients
  • 2 cups gluten free rolled oats
  • 1 cup fruit and nut trail mix
  • 1/2 cup raw honey
  • 1/8 teaspoon ground nutmeg
  • Cooking spray
Cooking Directions
  1. Pre-heat oven to 400 degrees F. Place oats on a sheet pan and toast in the oven for approximately 10 minutes or until oats smell nutty and have a light golden appearance.
  2. While oats are cooking heat honey and nutmeg in a medium pot on medium high temperature. Let honey boil for a few seconds then remove from heat. Quickly stir in oats and trail mix. Spray a 9" cake pan and scoop granola mixture into it. Spread evenly and let cool. Cut into 8 wedges.
Tips:
*If wedges get to sticky to cut, refrigerate for 30 minutes.
*When measuring honey spray the inside of the measuring cup with oil - the honey easily slides out.

  2. Love your homemade bars. I don't buy them because they are full of stuff I don't want to eat but haven't had good luck with making them at home. It looks like these stay together nicely. Yum....
