Ok – since it’s Thanksgiving week, I am going to keep this
short and simple. I am sure you
are all busy entertaining family and friends, planning and cooking your meals
and strategizing for Black Friday shopping.
As well, this week is the start of Chanukah. Like we didn’t have enough on our
plates (if you are Jewish like me)!
I’ve seen the word Thanksgivukah
coined all over the web – so funny!
When Food Network’s blog FN Dish asked food bloggers to come
up with a dish to utilize Thanksgiving leftovers, I immediately thought potato
pancakes. We use potatoes as a
significant ingredient in both holidays right? So what about taking our left over mashed potatoes and
turning them into potato pancakes – a spin on Latkes?
Well, that’s what I made – Mashed Potato Pancakes with
Homemade Apple Sauce. When I was
growing up in Manhattan, Chanukah was most special because of the
gifts and the eight days of celebrating.
But a close second was the potato pancakes. The crisp golden Latkes. with a hint of onion topped with sweet
apples and creamy sour cream – oh my!
I have to say, these mashed potato pancakes rival this
classic dish. They are tender, creamy
and crisp with a hint of onion. As
well, super easy to make with your leftover mashed potatoes; no peeling and
grating!
I hope you have a wonderful Thanksgiving and Chanukah if you
celebrate.
