Mashed Potato Pancakes with Homemade Apple Sauce

Ok – since it’s Thanksgiving week, I am going to keep this short and simple.  I am sure you are all busy entertaining family and friends, planning and cooking your meals and strategizing for Black Friday shopping.

As well, this week is the start of Chanukah.  Like we didn’t have enough on our plates (if you are Jewish like me)!  I’ve seen the word Thanksgivukah coined all over the web – so funny!



When Food Network’s blog FN Dish asked food bloggers to come up with a dish to utilize Thanksgiving leftovers, I immediately thought potato pancakes.  We use potatoes as a significant ingredient in both holidays right?  So what about taking our left over mashed potatoes and turning them into potato pancakes – a spin on Latkes?



Well, that’s what I made – Mashed Potato Pancakes with Homemade Apple Sauce.  When I was growing up in Manhattan, Chanukah was most special because of the gifts and the eight days of celebrating.  But a close second was the potato pancakes.  The crisp golden Latkes. with a hint of onion topped with sweet apples and creamy sour cream – oh my!

I have to say, these mashed potato pancakes rival this classic dish.  They are tender, creamy and crisp with a hint of onion.  As well, super easy to make with your leftover mashed potatoes; no peeling and grating!

Mashed Potato Pancakes with Homemade Apple Sauce

Recipe by Liz Hughes
Prep time: 15 minutes
Cook time: 15 minutes
Yield: 4
Ingredients
  • 3 cups leftover mashed potatoes
  • 2 large eggs, lightly beaten
  • 3 tablespoons flour
  • 1 teaspoon onion powder
  • 1 tabespoon dried parsley flakes
  • Canola oil
  •  Salt and pepper to taste
  •  Sour cream and apple sauce (recipe below)
Cooking Directions
  1. In a large mixing bowl combine potatoes, egg, flour, onion powder and parsley.
  2. Heat canola oil in a large non-stick skillet and cook for 3 minutes on each side or until golden brown (be sure to have a nice, large spatula because the pancakes are a little delicate).
  3. Cook in batches and place finished pancakes on a paper towel when done.
  4. If you need to keep these warm before serving, place on a baking sheet in an oven set to 275 degrees F.
  5. Serve with homemade apple sauce and sour cream.

Homemade Apple Sauce
Prep time: 15
Cook time: 20
Ingredients
  • 6 medium baking apples, peeled and cored and cut into 1 inch cubes
  • 1/4 cup apple juice
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon (optional)
Cooking Directions
  1. Combine all of you ingredients in a medium pot and cook for 20 minutes; stiring occasionally. Set aside and let cool for 10 minutes.
  2. Transfer apples to a food processor and process until smooth (you can process for less time if you like chunks!).
  3. Pour into an airtight container and refrigerate until ready to use.
