This effervescent drink is truly refreshing and I love its
beautiful ruby hue. The basic
strawberry syrup can also be used for snow cones, pancakes and as a glorious
topping for vanilla ice cream. The
possibilities are endless and I really love the fact that this summer sweet is
based on simple fresh fruit, a little sugar and a relatively small amount of
your time.

Makes approximately 3 cups of syrup
Ingredients
Prep time: Makes approximately 3 cups of syrup
Ingredients
- 2 cups diced strawberries
- 1 cup sugar
- 1 cup water
- 1/4 cup fresh lime juice
- seltzer water
Cooking Directions
- In a medium saucepan combine strawberries, sugar and water. Heat mixture on medium high until it boils. Let boil for 2-3 minutes. Turn off heat and let sit.
- When slightly cooled, take an immersion blender and puree the strawberries in the pan.
- Pour the strawberry mixture through a sieve and gently press on the solids. Mix the lime juice into the strawberry syrup. Pour desired amount into a glass. Add ice and seltzer water to taste. Garnish with fresh lime. Store in the refrigerator for up to two weeks.

ReplyDeleteI have been the caregiver for one month now, for my uncle who is 95 with diabetes. He is a "sugar free" junk food junkie and drinks diet soda!!!
I'm trying to get him to kick the "sugar free habit and instead enjoy smaller amounts and less often of the real thing. It's a process.
I'll be making this tomorrow for him sans lime.
