Nothing says Spring like bright green sweet peas. It is almost May and weather in San Diego is amazing. It's the perfect time for this lightened up Green Pea Hummus. The possibilities are endless. Sweet green peas join forces with a splash of lemon, a hint of garlic, a drizzle of tahini and a pinch of cumin, to make this light and creamy dip. Or even better, you could spread it on a sandwich. Basically you can dip, dunk or spread it.
Although hummus is traditionally made with chickpeas, all the other ingredients are consistent and the beautiful Mediterranean flavors shine through. This is an easy delicious alternative that takes mere minutes to whip up.
Green Pea Hummus
Prep time: 10 minutes
Total time: 10 minutes
Yield: 1 cup
Ingredients
- 1 cup frozen peas (thawed)
- 1/4 cup cilantro leaves
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 small garlic clove, finely minced
- 1/8 teaspoon ground cumin
- Kosher salt
- In a food processor pulse first 6 ingredients 30 to 40 seconds or to desired consistency. Season with salt to taste.
